The well over 100 vegetarian dishes from the cuisine of the Indians and pioneers are culinary diverse and close to nature. Bread, breakfast, soups, main courses and sweet delicacies including cakes provide a good insight into the traditional cuisine of North America.
The Indian diet was much more varied than one would expect; Even among the nomadic hunting tribes there were a surprising number of vegetarian dishes on the menu. The immigrants from the Old World had to adapt their eating habits to the harsh conditions of the vast continent, so vegetarian food was on the menu more often than they would have liked. A tasty preparation was the only luxury.
The author, also an enthusiastic nature and wildlife photographer, has traveled to the southwest of the USA several times a year since 1991 and spent a large part of 2007 in Canada. During these travels, she collected her recipes from pow-wows, ranch invitations, and other personal encounters with North America's old and new residents.
The preparation of meals according to the simple explanations of housewives and chefs is simple and imaginative; What is not there is replaced by something else if necessary. Many dishes can be prepared on or in a grill, in a Dutch oven or sometimes on a campfire instead of on the stove at home.
